For best results, use natural lumpwood charcoal and small flavoured wood chunks (optional). Heats up quickly: Ten minutes to reach 100°C for low and slow smoking. 15-20 minutes to reach 200-230°C temperature. Holds temperature for between 4 and 6 hours Thirty minutes to reach 375-400°C for pizza baking. Never becomes too hot to touch. Even when cooking pizzas, the outside of the oven rises to approximately 60-70°C over time.
